Creamy Fudgsicles: 5 Ingredients and Super Easy!

If you have kids or consider yourself a big kid at heart and are in search of a healthier version of the classic fudgsicle then I think these will fit the bill. They’re rich, creamy, smooth, and chocolatey. There is a healthy twist to these cool treats that give them an extra boost of nutrients.

I’ve added avocado to this recipe because of its silky, creamy texture and they happen to pack a good amount of nutrients………..a treat that keeps on giving! Yes avocados are high in fats, but these types of fats are vital to our bodies. Don’t fear the fat, make fat your friend. However, fats that hang around the deep frier and fats living in a tub of margarine aren’t going to treat you well. These guys are destructive and unstable, kick them to the curb!

A recent study done on fruits (yep, avocados are a fruit) showed their action in the prevention and treatment of CVDs (Cardiovascular Diseases). Aside from possessing heart healthy qualities, avocados are also great for brain health and glowing skin. Not everyone is a fan of the taste or texture from avocados but in this recipe, even my pickiest eater loved these.

I’m pretty sure I make the same face when I’m eating something delicious!

Makes 4 Bars
2 cups full fat coconut milk or coconut cream
1/2 avocado, flesh scooped out
3 medjool  dates, pitted
3 Tbsp cocoa powder
1-2 Tbsp  maple syrup, depending on taste
Add all ingredients into a high-speed blender and blend until well combined, it should thicken up the longer you blend it.
Pour the pudding like mixture into four popsicle holders. These are the ones I’ve used, you can make a batch and a half to fill all six popsicle molds. You could make these around lunch time if you wanted them for dessert. If you’ve had to leave them in the freezer overnight, you can give the kids one with their breakfast……making you the coolest mom ever!

Leave a comment below and let me know how they turned out for you.
