Chocolate Chia Pudding

I figured another recipe that is both healthy and chocolatey, couldn’t hurt. After all the temperature is expected to rise this week and who wants to turn their ovens on??  Trying to find meal/snack ideas in this heat is rather exhausting. I’ve had to get a little creative because dinners have me stumped. It’s summer break, the pace is more relaxed and sometimes its ok to have breakfast for dinner!

Here is a quick and easy dessert/breakfast idea that not only doesn’t require heat to make it, unless you’re working up a sweat trying to prepare it, it also happens to be healthy. Proteins, fibre, healthy fats, vitamins and minerals……….it’s in there!



Not much sweat and tears went into making these.

Gather all your ingredients, place into a mason jar, give it a little stir and shake ( make sure to put a lid on it first 😉 )






1/4 cup chia seeds

3/4 cup coconut milk

1/4 to 1/2 cup milk alternative

2 Tbsp cocoa powder

2-3 Tbsp maple syrup

1 tsp pure vanilla

pinch of sea salt


Place dry ingredients into a regular sized mason jar and then add your liquids. Give it a stir to make sure that none of the chia seeds are sticking to the bottom or sides of the jar. Place the lid onto the jar and give it a good shake……you want to feel the burn in your arms 😉  Place in the fridge for 2-3 hours.

If your pudding comes out too thick, add a tbsp of milk until desired consistency. If the pudding seems a bit runny, add a tsp of chia seeds and let it sit for another hour.

Top with coconut or whipped cashew cream ( recipe below)



1 cup raw cashews, soaked and drained

1/4-1/2 cup of coconut milk

1 Tbsp maple syrup

1 tsp pure vanilla

1 tsp coconut oil, melted


Place all ingredients into a high speed blender and blend on high until it has a smooth texture, you might have to stop the blender to scrape the sides. Having a good quality high speed blender really helps to turn this into a smooth cream. If you don’t have one, you can use a hand held blender. If you can’t seem to get all the lumps out, it will still taste wonderful.

Scoop out cashew cream and put into a small bowl and place in the fridge for 2 hours to firm up.
